Green Goddess Dressing and Dip Recipe

Oh my goodness you guys and gals, this dip is flavour packed! The creamy, zesty, and tangy flavours combined with tons of fresh herbs and a nice boost of fresh garlic, you're going to want to drink it straight from the bowl. And honestly, I don't blame you.
I enjoyed this recipe as a dip with my favourite almond crackers and an assortment of fresh veggies like carrot, radish, and Persian cucumbers. It's a great option to meal prep for healthy snacking during your week, or whip this up the next time you're hosting a party, of heading to a party and need a yummy dish to share. I promise you, there won't be a drop left.
Now before we hop into the recipe, I thought I would also share a fun story about how a green goddess dressing (not this exact one, but similar) gave me my first ever consultation job for a large restaurant chain here in Vancouver, B.C.
About 1 year into owning my first business, a meal prep company with a brick and mortar store in downtown Vancouver, I received a call from one of the owners of the restaurant I worked at for my first 7 years living here. He said he'd been following along my business and knew I was vegan because of my instagram, and that he wanted to add a vegan dish to their menu. At the time, they didn't have a single vegan option. He thought I might be just the person to bring in and consult with him and their head chef about a vegan menu item. I was SO excited. Also terrified because, consulting? I had never done that before, and honestly didn't know what it fully implied. But as someone with a figure it out as you go personality and unreasonable faith in themselves (thanks mom and dad) I said yes.
The recipe I created was called the Green Goddess bowl. It has crispy tofu, radishes, pea shoots, avocado, coconut rice, and a green goddess dressing. They loved it, and it turns out, their customers did too, because almost 10 years later, it's still on their menus. It was a really cool, and exciting experience, and while I didn't add consultant to my resume full time I hope to do work like this again in the future when it aligns again.

What You'll Need
Vegan greek yogurt. The thicker the better. I like to use a Canadian brand Maison Riviera for pretty much all my vegan yogurt needs. But any plain vegan greek yogurt you can get is great!
Extra firm tofu. The tofu is needed to get a thicker texture, since most vegan yogurts aren't as thick as dairy yogurt. Plus, it adds an additional 25g of protein to the recipe.
Dairy free feta cheese. I used a whole foods based feta cheese made from cashews. The brand is Millsie (previously Spread'em) but again, this is a Canadian brand, so you'll need to find a good one near you. I also really like the taste of the Violife Feta which is more widely available.
Loads of fresh herbs! This is a key component and what makes a green goddess dressing a green goddess dressing. I used a combination of fresh basil, cilantro, and parsley.
Lemon juice, fresh garlic, and salt.
Substitutions
The majority of these ingredients are necessary to use, however you can definitely switch up the brands used for yogurt and feta cheese.
Fresh herbs can definitely be substituted for your favourite herbs. I personally feel the fresh basil is the most important though, so try to keep that one in there, then add in your favourites like fresh dill or chives.
I did three cloves of garlic, but you don't have too! If you like it less garlicky you can skip it, use garlic powder, or just add one clove.
Storing
Keep the dressing in a tightly sealed meal prep container in the fridge for up to 5 days. These are my personal favourite meal prep containers, I use them every single week for everything!

Green Goddess Dressing and Dip
Recipe makes 4 servings (roughly 1/2 cup servings)
Macros per serving:
182 cals - 10g fat - 11g carbs - 12g protein
Ingredients:
1 cup plain vegan greek yogurt
175g extra firm tofu
65g vegan feta
1 packed cup fresh herbs, I used fresh basil, flat leaf parsley, and cilantro
3 tbsp lemon juice
3 cloves garlic
1 1/2 tsp salt
Instructions:
Add everything to a high speed blender and blend until smooth.
Adjust salt and/or lemon if desired.
Enjoy right with fresh chopped veggies, crackers, with bread, or over a salad.
For meal prep: seal in an airtight container and refrigerate until ready to eat.
Enjoy!
NOTE: the dressing will thicken as it sits!
